Greek-Style Chicken and Spinach Quesadillas

Rome wasn’t built in a day…but these quesadillas will whip up in less than 15 minutes!

The combination of roasted chicken, mozzarella and feta cheese, spinach and tomatoes makes them flavorful and delicious!

The perfect go-to recipe for a busy weeknight. Combine it with a Greek salad and you’re done!

  • 1/2 C. diced sweet tomatoes
  • ⅓ C. diced red onion
  • 1 C. chopped spinach
  • ½ C. feta cheese
  • 1 C. shredded mozzarella cheese
  • 4 medium or large tortillas
  • 1 C. chopped, leftover rotisserie chicken breast or 1 baked chicken breast, shredded

Instructions 

  • Combine chicken, tomatoes, red onion, spinach and cheeses.
  • Place 1/4 of the filling on one side of each tortilla. Fold the tortilla in half.
  • Heat a small amount of oil in a large flat plan over medium heat. Transfer the tortillas to the pan and cook for 3-4 minutes on each side, pressing down with a spatula, until each side is lightly browned and cheese is melted.
  • Cut into 3 triangles and serve with your choice of toppings like sour cream, salsa, pico de gallo, etc.

That’s it! Pair with a Greek salad and your favorite drink for a light and delicious meal.
