Cauliflower Mac And Cheese

Mac and Cheese doesn’t have to be loaded with carbs with this delicious cauliflower version, and it still has all the cheesy goodness of the traditional comfort food. My pickiest family member even thinks it’s tasty and it’s a great way to get in some extra cruciferous vegetables. For the upcoming Passover holiday, when you’re looking for something more filling than a matzah sandwhich, this fits the bill.

Ingredients:

  • 6-8 cups cauliflower chopped (I used 2 heads of cauliflower)
  • 3 Tbsp butter
  • 1 1/2 tsp. sea salt
  • 1/4 tsp. pepper
  • 1/4 tsp. dijon mustard
  • 1 C. whole milk
  • 1 C. heavy cream
  • 2 C. Cheddar Cheese block, either white or sharp, shredded

Preheat oven to 375

Fill a microwave safe dish with 2/3 C. water and add cauliflower to the bowl and microwave on high for 8-9 minutes. While cauliflower is cooking, fully shred cheese and set aside. In a large sauce pan, melt butter over medium heat. Gradually whisk in the milk, heavy cream, dijon mustard, salt and pepper. Add shredded cheddar until fully blended. Add cauliflower and transfer to a 9 by 13 baking dish. Sprinkle lightly with matzah meal, dot with butter and bake for 25 minutes until cheese is bubbly. Serve hot!
